Course 1
- Pan Fried Tomato - Breaded and fried Beefsteak tomato with an avocado and crab salsa with basil oil
- Jersey Vegetable Spring roll - Julienne zucchini, yellow squash, peppers, and vermacelli noodle in a spring roll and fried with a sweet and spicy Thai Chili Soy Sauce
- Vegetable Lasagna - Layers of eggplant, zucchini, squash, roasted peppers, pasta sheets, cheese and sauce then baked
- Cape May Salts - 3 locally harvested oysters over spring mix with a Black Pepper-Shallot Mignonette
Course 2
- Cape May Chowder - Cape May clam chowder with local white potatoes, corn, carrots and onions in a rich lobster cream based chowder
- Chilled Summer Melon Soup - A refreshing summer melon soup garnished with diced cantaloupe and honeydew with a spearmint whipped creme fraiche
- Mediterranean Salad - Humus, Baba Ganoush and toasted pita chips: grilled eggplant, zucchini, squash, tomatoes and peppers over spring mix and a roasted garlic oil
- Local Green Salad - A variety of locally grown lettuce, tricolor peppers, cucumbers, cherry tomatoes, dried cranberries and a watermelon-mint vinaigrette
Course 3
- 1/2 Roasted Mapleleaf Duck with oven roasted spaghetti squash, herb roasted red bliss potato and a blueberry-walnut compote
- Jamaican Jersey Jerk Chicken - Grilled chicken slathered in a spicy Jerk sauce with tempura battered zucchini and sweet potato frites
- Coconut Crusted Mahi-Mahi - Fresh Jersey Mahi with a vegetable couscous and a blue-raspberry sauce
- Pan Seared Crab Cake - An oversized signature crab cake with shrimp fried rice, summer succotash and roasted red and yellow pepper coulis
- Asian Marinated & Grilled Flank Steak - Spicy Mongolian marinated and grilled flank steak, roasted Fingerling potato and braised Swiss Chard
Course 4
- Homemade Blueberry Crumb Cake with raspberry whipped cream
- Warm White Peach Cobbler - topped with Rum Raisin Ice Cream
- Raspberry and White Chocolate Bread Pudding with a white Godiva Anglaise Sauce
- Homemade Chocolate and Berry Parfait - layers of chocolate mousse, blueberries, strawberries and raspberries
